My name is Mark Gaylord and I’m an Executive Chef III.
I live in Spring Grove, Illinois.
My favorite thing about being a chef is the feeling that I get knowing that the meals I produce make people happy.
One food tip I can give: Start with good ingredients.
Pappardelle is my favorite pasta shape.
If I could only have one dessert for the rest of my life, I’d choose banana bread ice cream sandwiches with chocolate and raspberry sauces.
Totinos frozen pizza is my guilty pleasure.
Onions are my favorite ingredient.
A French knife is a kitchen tool I can’t live without.
I spend my non-cooking time entertaining family and or friends. It usually involves cooking, which is my true passion.
The highlight of my career so far is a toss-up between being a featured chef at the James Beard House in New York City or winning the Chicago Culinary Fight Fest and competing in the World Food Championship.
Even as a kid, I wanted to be a chef when I grew up.
Making beef stew to earn a cub scout badge and having my family actually enjoy it is my first food memory.
