My name is Jose Tony Hernandez and I’m an Executive Chef.

My favorite thing about being a chef is working with a team that is just as excited as I am about providing great tasting food to our guests, and providing them with an experience they will remember as well as have an open relationship with the guests so they are able to ask questions.
A tip I can share is that when slicing a bunch of cherry tomatoes, use lids, put tomatoes in between the lids, and use a serrated knife to cut in between the lids. If you do this correctly, your prep time will be less.
Cavatappi is my favorite pasta shape.
If I could only have one dessert for the rest of my life, it’d have to be tiramisu. It’s rich and creamy. It just fulfills the sweet spot for me.
Chocolate ice cream is my guiltiest pleasure.
Garlic is by far my favorite ingredient.
A chef’s knife is the most essential kitchen tool. I can’t live without it.
When I’m not cooking, I have family time, read, exercise; and I love eating foods that I haven't tried yet.
The highlight of my career so far was when I competed in a children's fundraiser for Kawasaki disease with my brother.
I wanted to be a doctor as a kid.
The first food memory I have is spending time at family barbecues at my grandma's house.
