John Casto

My name is John Casto and I’m the CEC General Manager.

I live in Colorado Springs, Colorado.

My favorite thing about being a chef is that I’m always learning new skills and sharing them with people.

A great food tip is that mushrooms are over 95% water and will last much longer when stored in water.

Cavatappi pasta is my favorite shape. It’s just so silly.

If I could only have one dessert for the rest of my life, it’d be German chocolate cake. I love the flavor and textures.

Bacon is my guilty pleasure.


Love is my favorite ingredient.

In the kitchen, I can’t live without my trusty Martin Yan's chef knife.

When I’m not cooking, I’m rock hunting in the mountains, fishing, and just enjoying the family.

The highlight of my career so far is when I won Pikes Peak ACF Chef of the Year 2011-12 and having twenty-five years with Sodexo.

When I was a kid, I wanted to be a cameraman for television and movies.

My mom teaching me to make popcorn is my first food memory.
