My name is Jason Foss and I’m the Culinary Director for the Central Region.

Ice cream. If I could only have one dessert for the rest of my life, it would be ice cream. Growing up, we would spend time at my grandparents’ farm. After a long day of playing and doing chores, you would take a shower, put on your pajamas, and have a bowl of homemade ice cream. On special occasions, we would get homemade root beer with the ice cream. Yum!
The marshmallows in Lucky Charms cereal are my guilty pleasure. My wife won't buy it anymore because I pick them all out and nobody will eat the plain cereal.
Beef is my favorite ingredient! I grew up in a steakhouse.
My Global GF-36 knife is a tool that I can’t live without.
When I’m not cooking, my family and I spend most of our time racing dirt bikes, boating, camping, and trail riding around in our side-by-side UTV.
Cooking at the James Beard House for their Best Hotel Chefs series has been the highlight of my career.
As a kid, I wanted to be a fighter pilot.
My first food memory is when I was around nine years old, finishing up dishes from that night’s service at my parent’s restaurant. The kitchen was closed but a couple of regulars came in off the lake wanting to eat burgers. I talked my mom into letting me make their food. They loved everything and left me a five-dollar tip!
